what i am eating

I have been making poached eggs this week.  I am not a poached egg eater, but my husband is.  Actually, I have never tried one, and although I am quite adventurous when it comes to eating new things, the runny yolk is not something I can wrap my head around!

Until this week I had never even attempted poached eggs.  However, after learning a lot more about poached eggs and their benefits in my Whole Food Kitchen workshop, I decided to make them.  Did you know that the yolk contains choline, which is a liver detoxifier?  A lot of people shun egg yolks because of the cholesterol they contain.  Honestly, I think everything in moderation.  And I wonder sometimes at what the difference between fresh eggs (like the ones I get from my chickens every day) and the commercially produced and sold eggs of chickens who never go outside.

The other new thing I made this week was peanut noodles with broccoli, inspired by this recipe.  They were seriously delicious and my daughter gobbled them up.  *Note to self – make a double batch next time.  We didn’t include the chick peas in the recipe, because we are not fans.  Strange, isn’t it?  Considering we eat a wide variety of beans and legumes.  Chick peas are not in my favorites category though!

Also, I wanted to point out that I have started a Facebook page for Townsend House, which is funny considering I deleted my personal Facebook account a while back.  You can find a link on the right side of the page, the button with the f.   1. That looks yummy! We love eggs here, we eat them almost every day. Sometimes we get free range from a local farmer, other times we get store bought organic that are 'partially free range' and supplied from a farm north of us. Cholesterol and saturated fat is actually good for you, the low-fat fad is such a lie.   2. I just posted my English Muffins, given that Lisa @ Two Bears Farm was interested in trying them. They're pretty easy to make and so delicious. They freeze really well too.

  4. I do love poached eggs as I am a fan of runny yolks, but I still haven't mastered the technique! My husband HATES runny yolks so I have to cook his eggs practically to oblivion haha. I know it's a very divided subject!

    1. The poached eggs are surprisingly easy! Bring a small pot of water almost to a boil, add 1 tsp of white vinegar. Break egg into a bowl, and then slowly pour into water. Use a spoon to pull whites together and then put cover on, turn off heat, let sit ~4 minutes.

      My whites didn't separate, but I think that is because i used that morning's eggs. And I also only cooked one egg at a time. I can't say how good they were, but my husband said they were amazing, so I will take that as a positive!

    1. I haven't made my own english muffins before, but I have seen a lot of recipes recently as well! I have heard that it can be time consuming, but I think I would like to try it! Let me know if you try it!
